Carrot Cake

Mixture 1
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Sift all together and set aside.

Mixture 2
In another bowl mix the following...
3 eggs - Beaten well
3/4 cup melted butter (or oil)
3/4 cup buttermilk
2 cups sugar
1 teaspoon Vanilla
Add all ingredients together and mix well.

Mixture 3
In another bowl mix..
1 (8 oz.) can crushed pinapple drained
2 cups grated carrots
3/4 cup raisins
3/4 - 1 cup shredded coconut(optional)
1 cup chopped nuts(pecan or walnut)
Combine and add to Mixture 2, mix well.

Preheat oven to 350. Add Mixtures 2 and 3 to Mixture 1. STIR WELL
Pour into greased 13x9x2 pan or 2 - 9" pans. Bake 40 minutes at 350, or until a wooden toothpick tests clean.
Meanwhile make the glaze for the carrot cake, when the cake is done pour this glaze over the carrot cake and let cool.

Buttermilk Glaze for Carrot Cake
Mix the following all together....
1/4 cup sugar
1/2 teaspoon baking soda
1/2 cup buttermilk
1 stick butter,melted
1 tablespoon corn syrup

IF you need your cake sweeter then make this frosting and add it to the cooled cake.

Icing for Carrot Cake
6 tablespoons butter
1 (8 oz.) pkg. cream cheese
3/4 teaspoon vanilla
2 cups powdered sugar
1 teaspoon orange juice
1 teaspoon grated orange peel
Beat well-ice cake.
