Ingredients:
3 cups grated carrot
4 eggs
1_ cups sugar
1/2 cup vegetable or corn oil
1/2 teaspoon salt
2 teaspoons of baking soda
2 teaspoons of cinnamon
2 cups whole wheat or ordinary flour
1 cup chopped walnuts (optional)
1 cup sulatnas/mixed fruits (optional)


Method:
- Grease and flour a 9"x 13"/22cm x32cm baking pan and preheat oven 350 F/ 180 C
- Mix eggs, sugar and oil together
- Blend salt, soda, cinnamon and flour then add to egg and sugar mix
- Stir in carrots and walnuts and sultanas
- Pour into prepared tin and bake 45-50 minutes

When completly cool frost with

1 1/2 cups icing sugar
3 oz/ 75g cream cheese
1/4 cup butter
1 teaspoon vanilla

- Blend well and spread
