Coconut Milk Cake

3/4 cup unsalted butter
1 1/2 cups granulated sugar
3 eggs
1 whole, fresh coconut
1 cup water
3 cups all-purpose flour
3 tsp. baking powder 1/2 tsp. salt

Crack the coconut and remove the juice and coconut. Place in a
blender with 1 cup of water and blend until fairly smooth. Cream
butter and sugar. Add eggs one at a time and beat well. Stir in
coconut mixture alternately with dry ingredients and beat well.
Bake in a greased tube pan at 350 for about 50 minutes. Serve warm.
