Rhubarb Coffee Cake
1 1/2 cups brown sugar
1 cube butter
1 egg
1 tsp vanilla
2 cups flour
1/2 tsp salt
1/2 tsp baking soda
1 cup buttermilk
1 1/2 cup rhubarb, cut into 1/2 inch pieces
1/2 cup brown sugar
1 tsp cinnamon
Cream together butter and sugar. Mix in egg and vanilla. Add
flour, salt, and soda alternatly with buttermilk. Stir in rhubarb.
Top with brown sugar and cinnamon.
Bake at 375 for 30 to 40 minutes in a 2 quart baking dish.
