Streusel Coffeecake

3/4 cup sugar
1/3 cup oil
1 egg
1/2 cup milk
1 1/2 cups sifted flour
2 tsp. baking powder
1/2 tsp. salt

Combine sugar, oil, and egg. Add milk and beat thouroughly, Stir
in combined dry ingredients. Beat until smooth. Spread in a
greased 9-inch square pan. Sprinkle with Streusel topping. Bake
at 375 F. for 30-35 minutes.


Streusal Topping

1/2 cup light brown sugar
2 TBSP. regular flour
2 tsp. cinnamon
2 TBSP oil or butter, softened
1/2 cup finely chopped nuts (pecans and walnuts work well)

Combine all ingredients with a fork. Sprinkle on batter. Mades
1 9-inch square cake.

I use a pyrex square pan and bake it at 350 F. for about 25 minutes
and I double the streusal topping. It looks like alot sitting on
top of the batter, but as it bakes, the batter will rise up around
it.
