Eggless, Milkless, Butterless Cake
(egg free dairy free)
2 cups brown sugar
4 tablespoons shortening (1/4 C.)
1 or 2 cups raisins
1 teaspoon ground cloves
1 to 2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 teaspoon salt
2 cups hot water
1 teaspoon baking powder
3 cups all-purpose flour
1 1/2 teaspoons baking soda dissolved in 1 tablespoon warm water
In a saucepan, mix and bring to a boil the sugar, shortening,
raisins, cloves, cinnamon, nutmeg, ginger, salt, and hot water.
Boil 5 minutes, cool.
Sift baking powder with flour. Stir in the baking soda/water
mixture. Combine raisin mixture with flour.
Pour into a 9x13 inch greased pan. Bake for 35 minutes at 350 F.
