Fairy Cakes
100g self-raising flour a pinch of salt 100g butter or margarine 100g caster (superfine) sugar 2 eggs fat for greasing
Heat the oven to moderate, 180 Centigrade. Mix the flour and salt, cream the butter or margarine and the sugar together until light and fluffy. Beat the eggs until liquid, then beat into the mixture gradually. Stir in the flour and salt lightly. Divide the mixture evenly between 12-14 paper cases or greased bun tins (probably muffin tins will do) and bake for 15-20 minutes.
