Fairy Cakes
100g butter, softened
100g caster sugar
100g self raising or cake flour
1 tsp baking powder
2 eggs
1 tsp finely grated lemon rind
Mix all together with an electric mixer and spoon into paper cases.
Bake at 180C for 10 - 15 minutes or until just firm and golden.
