Four From One Fruitcake
Serves 36

4 cups walnuts, halves and pieces
1 1/2 cups dates, halved, pitted
1 1/2 cups whole candied cherries
3/4 cup candied orange peel
1 1/2 cups candied pineapple
1 cup sifted flour
2 tablespoons sifted flour
1 cup sugar
2 tablespoons sugar
3/4 teaspoon baking powder
1 teaspoon salt
4 eggs
1 tablespoon vanilla
1 teaspoon rum flavoring
1/4 cup rum, brandy or sherry

Combine walnuts, dates, cherries, pineapple and orange peel. Resift
flour with sugar, baking powder and salt over fruit; mix well.
Beat eggs with vanilla and rum flavoring. Pour over fruit mixture;
stir until well blended. Turn into paper lined and greased 9x13
pan; spread evenly. Bake below oven center at 275 for about 1 1/2
hours or until cake tests done. Remove from oven and let stand in
paper for 30 minutes Remove from pan, remove paper and cool
thoroughly. Sprinkle with brandy, sherry or rum. Cut crosswise
into 4 even strips. Wrap each strip in foil and store in cool
place. Note: Use brown grocery store bag paper to line pan.
