Aussie Christmas Boiled Fruit Cake

12 oz package mixed candied fruit
1/2 cup chopped dates
1/2 cup saltanas
2 oz dried apricots
1/2 cup apricot jam
1/2 cup orange juice
8 oz butter
3/4 cup brown sugar, lightly packed
2 cups self-raising flour
1 tsp mixed spice
1 tsp cinnamon
1 tsp ground ginger
1 tbsp brandy
3 eggs

Combine mixed fruit, remaining chopped fruit, jam, orange juice,
butter and brown sugar in a large saucepan. Stir over low heat
until butter melts and sugar has dissolved, increasing heat, bring
to boil, reduce heat, simmer for 5 minutes. Let stand until cold.
Add combined beaten eggs and brandy, then fold in sifted dry
ingredients. Grease deep 8 inch square tin, line with greased
greaseproof paper, spread mixture evenly into tin. Bake in moderately
slow oven 2 to 21/2 hour or until cooked when tested. Moderately
slow oven is approx 300-325.
