RICH FRUIT CAKE
6 egg whites
8 oz butter
1/2 lb soft brown sugar
1 lb self raising flour
4 oz glace cherries
2 lb mixed dried fruit
1 tsp spice
1 tsp ground nutmeg
1 tsp ground cinnamon
2 oz ground almonds
3 Tbs whiskey
Beat egg whites. Cream butter and sugar together. Gradually beat
in egg whites. Fold in flour. Add Fruit, spices and whiskey.
Put mixture into a prepared, lined 8 inch cake tin. Bake at 300
F for 4 hours.
