Chunky Fruit Cake

5 oz whole Brazil nuts
5 oz halved walnuts or pecans
4 oz dried apricots, roughly chopped
4 oz dried dates, chopped
3 oz raisins
6 oz mixed colour glace cherries
3 oz candied peel
3 oz plain flour
grated rind and juice of 1 lemon
1/2 tsp baking powder
1 tsp vanilla essence
3 oz soft brown sugar
3 eggs

Preheat the oven to 150C/300F/Gas 2. Mix the nuts and fruit together.
Whisk the remaining ingredients together to make a smooth batter.
Add the fruit & nuts to the batter and mix well. Line and grease
an 8" tin or ring mould and pour in the cake mixture. Cook for 2
hours. Wrap and store in an airtight tin for 3 days - 1 month before
using.
