Fruit Cake
1/4 Tbsp baking powder
140 grams maida
250 grams dried nuts (soaked in water overnight)
100 grams butter
2 eggs
2 Tbsp caramel
100 grams sugar
1/2 Tbsp vanilla essence
1 pinch salt
1/2 Tbsp lemon rind
Beat eggs, butter and vanilla essence until fluffy. Add maida.
Add sugar, salt, baking powder, lemon rind and lemon juice and mix
well. Finally add the dried nuts and milk. In a greased tray pour
the mixture and bake 350C till done. Pour the caramel on top and
serve chilled.
