Easy Pumpkin Fruitcake
1 cup cooked mashed pumpkin (warm)
4 oz butter
2 eggs
1 cup white sugar
2 tsp mixed spice
2 cups self raising flour
375 gm mixed fruit
Cream butter and sugar togrther, add eggs and beat well. Beat in
flour and spices. Stir in mixed fruit then fold in pumpkin. Pour
into a greased loaf tin and bake for 40-50 mins at 180-200 C.
Serve warm with butter.
