Gingerbread

1/2 cup butter
1/2 cup dark brown sugar
1/2 cup molasses
1/2 cup honey
1/4 cup sherry
1/2 cup warm milk
3 cup flour
2 tsp. ginger
1 1/2 tsp. cinnamon
1 1/2 tsp. mace
1 1/2 tsp. nutmeg
1 tsp. cream of tartar
3 eggs, beaten
1 tsp. soda
2 tbsp. warm water
2 tbsp. orange rind, grated
1/4 cup orange juice
1 cup raisins

Preheat oven to 350 degrees. Spray a 9 x 13 inch pan. Cream
butter; add sugar and next 4 ingredients; beat. Add dry ingredients
to sugar mixture with eggs. Dissolve soda in water. Add it and
rind and juice and raisins. Pour in prepared pan. Bake for 45 to
50 minutes or until firm in the center.
