LEMON-APRICOT CAKE
1 box Lemon Supreme Cake mix
1-1/4 cup apricot nectar
4 eggs, beaten
1/2 cup sugar
1/2 cup oil
Mix first 4 ingredients, then add eggs. Bake at 3250 for 45 minutes
to 1 hour. While cake is still warm, mix the icing and pour over
cake. Some versions of this recipe call for poking holes in the
cake with a toothpick before pouring on the icing. I prefer not to
poke the holes so that the icing doesn't seep through the cake and
make it sticky.
Icing:
1 cup confectioners sugar
Juice of 1 lemon
