Moist Lemon Cake

4 oz/110g butter/margarine
6 oz/170g sugar
2 large eggs
6 oz/170g self-rising flour
4 tbsp milk

2 oz icing sugar
lemon juice

Cream fat and sugar together. Add eggs and flour. Turn mixture
into a 2lb loaf tin. Bake at 160C for 45 minutes. (Cover with foil
for a while if it might burn). Leave cake in tin until cold.

Make up lemon syrup in a saucepan with a small amount of lemon
juice and icing sugar. Pour hot syrup over cake leave until cold
and remove carefully.

Or mix icing sugar and lemon juice and spread over cake (still in
tin) and leave icing to set.
