OATMEAL CAKE

1 1/2 boiling water
1/2 cup margarine
1 cup quick-cooking oats (oatmeal)
1 cup white sugar (with 2 tablespoons removed)
1 cup brown sugar
2 eggs
1 1/2 cups all-purpose flour
1/2 teaspoon salt
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon nutmeg
1 teaspoon cinnamon

Preheat oven to 375 degrees F. Grease a 13x9x2" baking pan.

Combine boiling water, margarine, and oats; stir a few times to
blend, then set aside until margarine melts (about 20 minutes).
Mix white sugar, brown sugar, and eggs; beat until creamy. Combine
flour, salt, baking soda, baking powder, nutmeg, and cinnamon.
Add the flour mixture and the sugar-egg mixture to the oatmeal
mixture; mix thoroughly.

Pour batter evenly into the greased 13x9x2" baking pan and bake 35
to 40 minutes at 375 degrees F or until cake is done.


Frosting

6 tablespoons margarine (not melted)
1/2 cup white sugar
1/2 cup evaporated milk
1 cup grated coconut
1/2 teaspoon vanilla extract
3/4 cup chopped nuts

Combine all ingredients. As soon as you remove the cake from the
oven, spread the frosting over the top of the cake. Broil the
frosted cake until the margarine melts and the coconut is tinted
with brown.
