Delicious One Egg Cake

2 cup sifted cake flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup shortening
1 cup granulated sugar
3/4 cup milk or 6 tablespoons evaporated milk plus 6 tablespoons water
1 teaspoon vanilla extract

Sift flour, baking powder, and salt together 3 times. Work shortening
with a spoon until fluffy and creamy; then add sugar gradually,
while continuing to work with a spoon until light. Add egg and
beat very thoroughly with a spoon. Add dry ingredients alternately
in thirds with the milk, to which vanilla has been added, beating
with a spoon after each addition until smooth. Bake in a greased
and floured cake pan, 8"x8"x2", in a moderate oven of 350 degrees
F. for 50 min., or until done. Or bake in 2 greased and floured
8" layer cake pans in a moderately hot oven of 375 degrees F. for
25 min. or until done. Spread with frosting.


Variations:

One Egg Nut Cake: Make Delicious Cake, adding 1 cup finely chopped
nuts, after adding the egg.

One Egg Spice Cake: Make Delicious Cake, sifting 2 teasp. cinnamon,
1 teasp. each of allspice and nutmeg, and 1/4 teasp. powdered cloves
with the flour, baking powder, and salt. Add 2 tablesp. more milk.
