ORANGE SLICE CAKE
1 lb. candy orange slices, chopped 1/2 lb. candied pineapple 2 cups sweetened, flaked coconut 2 cups pecans, chopped 1 cup flour
1 cup butter 2 cups granulated sugar 4 large eggs 2 tsp. grated orange rind 1 tsp. baking soda 2 1/2 cups All-purpose flour 1 cup buttermilk
1/2 cup orange juice 1 cup granulated sugar orange liqueur to taste (optional)
Mix candy orange slices, dates, coconut, and pecans in 1 cup of flour. Set aside.
Preheat oven to 300 degrees F. Butter and flour a tube or bundt pan or four loaf pans. Non-stick pans are the best.
Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Mix in orange rind.
Mix together baking soda and flour. Add flour mixture alternating with buttermilk to butter-sugar mixture. Mix well. Stir in candy orange mixture. Pour into pan of choice and bake until wooden pick inserted in cake comes out clean (time varies, depending on size of pan, almost two hours for bundt pan).
Mix orange juice and sugar in small sauce pan. Bring to boiling. Pour in orange liqueur to taste.
Poke holes in hot cake and pour boiling orange juice mixture over top. Turn cake out of pan and brush juice mixture on sides and top of cake with a pastry brush.

A little bit goes along way.It gives a wonderful alternative to the classic Fruitcake. The orange candy is my Father's favorite candy,it was nice to see a recipe for something that someone really likes. And it is not as expensive the classic fruitcake.Thank You for this recipe.
