Peach Cake
3 cups fresh peaches, sliced
1 cup sugar
1/2 tsp almond extract
grated rind of 1 lemon
juice of 1 lemon
1 cup flour
1/3 cup shortening
1/2 cup milk
1 tsp salt
3 tsp baking powder
1 egg
3 Tbsp sugar
Put peaches into a 10 X 6 1/2 inch baking dish, sprinkle w/ 1 cup
of sugar, almond extract, lemon juice and the lemon rind. Mix
together the flour, salt, baking powder, 1 Tbsp sugar. Cut in the
shortening and add the milk, and egg. Dot over the peaches and
sprinkle the remaining sugar over the top. Bake at 400F for 35 -
40 minutes.
