PEANUT BUTTER CAKE

1 stick ( 1/2 cup) margarine, softened 1/2 cup peanut butter 1/2 cup vegetable oil 1 cup water 2 eggs, beaten 1/2 cup milk 2 cups flour 2 cups sugar 1 teaspoon baking soda 1 teaspoon vanilla
Mix margarine, peanut butter, vegetable oil and water together in bowl until well blended. (Do not use an electric mixer.)
Add eggs, milk, flour, sugar, soda and vanilla. Stir until well blended. Pour into greased and floured 15x9-inch sheet cake pan. Bake at 400 for 20 minutes. Cool cake completely before icing with Peanut Butter Frosting.
Peanut Butter Frosting
1 stick ( 1/2 cup) margarine 1/3 cup milk 1/2 cup peanut butter 1 lb. confectioners' sugar 1 teaspoon vanilla
Put margarine, milk and peanut butter in saucepan and bring to a boil. Add confectioners' sugar and vanilla. Spread on cooled cake.
Note: When making cake, mix margarine and peanut butter first, then oil, then water. Work fast when spreading frosting. It sets quickly.

Everyone seemed to like this cake. I think the frosting directions need to be a bit more explicit. I did not know what to do after adding Confectioners sugar. Do you continue to cook? Do you bring to a boil or just cook over low heat until it thickens? When I cooked the sugar did not dissolve as it should have. Anyway, thanks for the recipe, I will probably use it again if I can figure out the frosting.
