Pineapple Banana 01

Pineapple and Banana Cake
2 ripe mashed bananas
1/2 cup drained crushed pineapple (canned)
1 1/4 cups granulated sugar
1 2/3 cups self raising flour
2 tsp ground cinnamon
2/3 cup veg. oil
1/4 cup pineapple juice
2 eggs
Mix bananas, pineapple and suger in large bowl. Add sifted flour
and cinnamon, combine using a wooden spoon. Whisk together oil,
juice and eggs, add to the above mixture. Stir until well mixed.
Pour mixture into a 9 inch greased and floured cake tin. Bake in
a preheated oven 350F.
Cook for 1 hour or until skewer comes out clean. Leave for about
10 minutes then turn out on to a wire rack to cool.
