Pineapple or Apricot Upsidedown Cake

1 stick butter
1 can pineapple slices

5 tablespoons pineapple juice
1 cup white sugar
3 eggs, separated
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder

Warm a 9 or 10 " cast iron skillet on stove. Melt butter in it.
Place all the pineapple rings in a circle, put one in the center
and break up the last two and fill those center holes up and the
little spaces between the rings.

Heat oven 350 F.

Sift flour with salt and baking powder. Combine juice, sugar, egg
yolks, flour, salt and baking powder. Mix to moisten, then fold
in the 3 egg whites beaten to soft peaks. Pour over the rings,
bake until brown and springs back in center about 40 minutes.
