Pineapple Upside Down Cake
1/2 cup butter or margarine
1 cup firmly packed brown sugar
1 can (15 1/2 oz.) Del Monte Pineapples
1/3 cup shredded coconut
1/3 cup walnuts or macadamia nuts, chopped
5-6 maraschino cherries, halved
1 pkg. (18 1/2 oz.) yellow cake mix
Melt butter in 13 x 9-inch pan. Add sugar. Arrange pineapple,
coconut, nuts, and cherries in sugar mixture. Prepare cake mix as
package directs. Spread over fruit. Bake at 350 F, 40 to 50
minutes or until tests done. Cool 5 minutes: invert onto large
serving dish. Serve warm or cold. 12 servings.
