Pineapple Upside Down Cake
(12 servings)

1 package of Duncan Hines Pineapple Supreme Cake Mix
1/2 cup (1 stick) butter or margarine
1 cup firmly packed brown sugar
1 can (20 oz) pineapple slices (juice reserved for cake mix)
Red maraschino cherries, drained and halved

Preheat over to 350 degrees F. Melt butter and pour into ungreased
13X9X2-inch pan. Sprinkle brown sugar evenly in pan. Arrange
pineapple slices on brown sugar and place maraschino cherry halves
in center of pineapple slices. Prepare cake mix as directed (note:
I save the juice from the canned pineapple slices and use it as
part of the called for water). Pour batter in pan over fruit and
sugar. Bake at 350 degrees F for 43-48 min or until toothpick
inserted in center comes out clean. Cool for 5 min in pan. Invert
onto serving platter (be careful it can stick a little).
