PRUNE CAKE
1 cup oil
2 c sugar
3 eggs
1 tsp vanilla
1 3/4 c flour
1 tsp salt
1 tsp baking soda
1 tsp nutmeg
1 tsp cinnamon
1 tsp allspice
1 cup buttermilk
1 cup chopped nuts
1 cup pitted prunes, chopped and dusted with 1/4 cup flour
Blend till smooth the first 4 ingredients. Mix and sift the dry
ingredients and stir into the wet ingredients. Stir in buttermilk,
prunes and nuts.Place mixture in a 9 x13 pan or two loaf pans. Bake
350 45 to 50 minutes or tested done. Note: frost cake if desired
with a vanilla type frosting or glaze.
