PUMPKIN COFFEE CAKE
Serves 12

1/2 cup butter
3/4 cup sugar
1 1/4 tsps vanilla extract
3 eggs
2 cups all-purpose flour
1 tsp each, baking powder and soda
1/2 cup sour cream
1 3/4 cup solid-pack pumpkin
1 egg, slightly beaten
1/3 cup sugar
1 1/2 tsps pumpkin pie spice
streusel

Cream butter, 3/4 cup sugar and vanilla. Add eggs and beat well.
Combine dry ingredients, add to butter mixture alternately with
sour cream. In another bowl, combine pumpkin, beaten egg, 1/3
cup sugar and pie spice. Spoon half of the batter into a 13"x9"
baking pan, spread half of the pumpkin mixture and then half of
the streusel. Repeat layers, ending with streusel on top. Bake at
325 degrees for 50 to 60 minute, or until tested done in middle.


STREUSEL

1 cup brown sugar
1/3 cup butter
2 tsps cinnamon
1 cup chopped nuts

Mix together well.
