Pumpkin Cake with Cream Cheese Frosting
4 eggs
1 2/3 cup sugar
1 cup oil
16 oz can pumpkin
2 cups flour
1/2 cup butter, softened
3 oz package cream cheese
2 cups powdered sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 tsp vanilla
Beat eggs, sugar, oil, and pumpkin together until light and fluffy.
Then add the rest of the cake ingredients, beating well. Spread
batter into an ungreased jelly roll pan (15"x10"x1"). Bake at 350F
for 25-30 mins. Cool and then frost.
FROSTING
8 oz package cream cheese
1/2 cup butter
1 box powdered sugar
milk or cream
Beat all frosting ingredients together. Add just enough milk so
that frosting has a fairly stiff consistency.
