PUMPKIN SPICE CAKE
1 package spice cake mix (no substitutions)
1 cup cooked or canned pumpkin
1/2 cup water
1/2 vegetable oil
1 package 3.4 ounce instant vanilla pudding dry mix
1 teaspoon ground cinnamon
1/2 cup chopped pecans (optional)
In a mixing bowl, combine cake mix, eggs, pumpkin, water, oil,
pudding mix and cinnamon and mix for five minutes. Stir in pecans.
Pour into a greased and floured 10" fluted tube pan. Bake at 350
degrees for 45-55 minutes or until cake tests done. Let cool in
pan for ten minutes before removing to a wire rack.
Top with cream cheese frosting, a thin glaze, sifted confectioners
sugar, whipped topping, or just eat it plain.
