RECIPE FOR RAVANI

3- STICKS OF SWEET BUTTER
9- EGGS
1.5 CUPS OF SUGAR
1.5 CUPS OF SEMOLINA
1.5 CUPS OF FLOUR
3 TEASPOONS OF BAKING POWDER
SHREDDED LEMON (Orange) PEEL
1-2 SHOTS OF OUZO (OR ANY SWEET LIQUOR)


**Mix the baking powder in the flour first then mix with the semolina**
Mix the butter for about 20 minutes until it becomes smooth, and then slowly add the sugar. Mix for an additional 20 minutes.
In the meantime separate the egg yolks and the whites. Make the egg whites in a “marega”. After the mixture of butter & sugar is blended well slowly add the eggs yolks and beat well.

PREHEAT OVEN TO 325F.

Following 5 minutes of mixing, start adding the flour mixture, alternating with the marega.
Finally add the liquor & Lemon peel.
Place in a greased pan and bake for 35-40 minutes.

SYRUP
Boil for 5 minutes 2 cups sugar with 2 cups of water (if you want you can add some honey).
WHEN ADDING THE SYRUP TO THE CAKE:
ONE OF THE TWO HAS TO BE COLD; IT IS BETTER IF THE CAKE IS WARM AND THE SYRUP IS AT ROOM TEMPERATURE.
