Rhubarb Cake

1 1/2 cup brown sugar
1/2 cup shortening
1 cup sour milk or buttermilk
1 tsp. vanilla
1 egg
1 tsp. baking soda
2 cups flour, sifted

Mix all ingredients well, then stir in 2 cups of rhubarb cut into
small pieces. Pour into greased 9x13 pan, and sprinkle with 1/4
cup sugar and 1 tsp. cinnamon on top. Bake at 350 degrees for 40
to 50 minutes.

Note: to make sour milk put 1 tablespoon of lemon juice, (can use
Real Lemon concentrate) into a 1 cup measuring cup and fill with
milk. Stir and let set a minute.
