Snowflake Cake
(Makes 12 servings)

1/2 cup Mango or Papaya Juice
1/4 cup granulated sugar
1 tablespoon cornstarch
2 egg yolks, lightly beaten

1 package (18 ounces) white cake mix
1 cup Mango or Papaya juice
1/3 cup water
2 egg whites
1 container (16 ounces) prepared vanilla frosting
1/2 cup flaked coconut

For filling, combine 1/2 cup juice, sugar, cornstarch and egg yolks
in small saucepan. Cook over medium heat, stirring constantly,
until thick. Cool. For cake, preheat oven to 350 F. Grease and
flour two 8-inch-round cake pans. Combine cake mix, 1 cup juice,
water and egg whites in large mixer bowl. Beat at high speed for
3 minutes, scraping bowl and beaters occasionally. Pour into prepared
pans. Bake for 20 to 30 minutes or until wooden pick inserted in
center comes out clean. Cool in pans on wire racks for 10 minutes;
remove to wire racks to cool completely. To assemble, spread filling
between cake layers. Spread frosting over top and sides of cake;
sprinkle with coconut.
