Spice Cake
1 cup dark molasses
1/2 cup unsalted butter
1/2 cup dark-brown sugar, packed
2 3/4 cups cake flour
1 tablespoon chopped ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 teaspoon salt
1 teaspoon baking soda
1 cup plain yogurt
1/4 cup orange juice, freshly squeezed
2 eggs, slightly beaten
Preheat oven to 350 degrees Sift Flour. Mix together wet ingredients.
Fold in the rest of the ingredients and bake until a knife comes
clean. Enjoy it with oranges, mangoes and yogurt.
