IRISH WHISKEY CAKE 1 lemon or 1 orange 2 tbs. Irish whiskey 1.25 cups sultana raisins (or golden raisins) 3/4 cup butter 3/4 cup sugar 3 eggs 2.5 cups sifted cake flour pinch of salt 3/4 tsp. baking powder With a sharp knife, peel the rind off the lemon or orange. Soak the rind in in the whiskey for a few hours to draw out the flavor. Discard the rind and soak the sultanas in the whiskey. Cream the butter and sugar. Add the eggs, one at a time, with a tsp. of flour, and beat well after adding each egg and flour. Sift flour, slat and bakingpowder together and fold into the egg mixture. Lastly fold in the sultanas and whiskey. Put into an oiled 7 inch cake pan lined with waxed paper. Bake at 350 F for 1.25 to 1.5 hours. Reduce heat toward the end of baking time (250 for the last 20 minutes). Eat while fresh.
