Buckeyes
2 sticks of unsalted butter, softened 1 pound box 10x sugar, 4 cups 3 1/2 oz. angel flake coconut 8 ounces crunchy peanut butter 1 cup chopped nuts optional but nice I use peanuts 1 1/2 cups graham cracker crumbs 1 tsp. vanilla 1/2 cake parafin wax 1 12 ounce package chocolate chips
Mix all ingredients with hands-if it seems too dry add a little more peanut butter. Form into bite size balls. Melt wax and chocolate chips in a med. size pan over low heat melt the wax about half way first then add the chocolate. When the mixture is melted and smooth, dip each ball into the chocolate then palce on waxed paper to dry. You can use a toothpick inserted into the top of the ball or I use a spoon made for dipping candy-found in the Wilton baking section of stores. They work best. This makes about 100.
