Chocolate Caramel Peanut Candy Bars

60 g corn syrup 30 ml butter 15 ml vanilla essence 40 g peanut butter dash salt 3 cups icing sugar 35 caramels 450 g unsalted peanuts 12 oz milk-chocolate chips
Thoroughly blend the corn syrup, butter, vanilla, peanut butter, and salt until creamy. Add icing sugar.
Remove mixture from bowl press into a greased 23cm x 23cm inch pan. Refrigerate.
Melt the caramels in a small pan over low heat. When melted, mix in the peanuts. Pour mixture over the peanut butter mixture in the pan. Refrigerate.
Microwave chocolate for 2 minutes or until melted, stirring once while melting.
Cut peanut butter mixture into 5cm x 2.5cm bars. Spear each piece with a fork and dip into the melted chocolate. Tap the fork against the side of the bowl after dipping.
Place the bars on waxed paper to cool.
Makes about 2 dozen.
