2 1/2 cups (625 ml) sugar
3/4 cup (175 ml) light corn syrup
1/4 cup (50 ml) water
2 egg whites
flavouring

Dissolve the sugar in the corn syrup and water over medium heat.
Bring the syrup to a boil, and boil to the thread stage ((234F,
112C). Beat eggs whites until very stiff. Pour two thirds of the
syrup in a thin stream over the beaten egg whites, whisking all
the time. Put the rest of the syrup back on the heat and cook it
to the soft-ball stage (240F, 116C). Pour the syrup into the
egg-white mixture, whisking constantly. Add the flavouring, and
continue whisking until mixture forms stiff peaks. Pour mixture
into a buttered pan 8 inches (20 cm) square. Let cool and cut into
squares.
