Potatoe Fondant Mints

1 medium potatoe, baked
Pinch salt
1 tbsp butter, softened
5 drops peppermint oil
Food Coloring
2 to 4 cups confectioners' sugar

Scoop potato from skin and mash thoroughly. Add ingredients except
sugar; mix well. Add sugar, 1/2 cup at a time, beating well. When
mixture is heavy, turn out on confectioners' sugar and knead smooth.
Add enough sugar to form a pie dough like consistency. Chill, knead
again. Form into balls and flatten. Let dry enough to form crust.
Store in airtight container.
