Marshmallows
1 pkg. unflavored gelatin
1/3 c cold water
1/2 c. sugar
2/3 c. light corn syrup
1/4 tsp. salt
1 tsp. vanilla
Combine gelatin and water in top of double boiler. Let stand 5
minutes to soften. Place over boiling water and heat until gelatin
dissolves.
Add sugar and stir over hot water until completely dissolved. In
large mixer bowl, combine corn syrup, vanilla and salt. Add hot
gelatin-sugar mixture and beat at high speed until light and fluffy
(about 15 minutes). Lightly grease a 9" square pan, and pour in
marshmallow mixture. Let stand until set, about 1 1/2 hours. Cut
into 1" squares and roll in powdered sugar.
