MARSHMALLOWS

2 envelopes unflavored gelatin
1 cup boiling water
food coloring (if desired)
2 cups sugar
1/2 tsp vanilla

Dissolve gelatin in boiling water. Add sugar and vanilla. Beat
until thick and fluffy. Add coloring.

To make marshmallow eggs: Fill dripper pans with flour, push molds
into flour, making egg-shaped indentations (a regular egg works
fine). Spoon marshmallow indentations. Dust tops with flour.
Eggs may be covered with chocolate, if desired. Makes about 50-75
eggs.
