PEANUT BRITTLE

2 cups sugar
1 cup white syrup
2 cups raw peanuts
1 cup water
1/4 tsp. salt
1 tsp. butter
1/4 tsp. baking soda

Combine sugar, syrup and water in a pan. Cook slowly, stirring
until sugar is dissolved. Cook to soft ball stage (test in water).
Add peanuts and salt, cook to hard crack stage, stirring constantly.
Add butter and baking soda. Pour onto buttered cookie sheet. Cool
partially by lifting around edges with spatula. Keep spatula moving
under mixture so it won't stick. Turn when firm and warm. Pull
edges to make thinner. Break into pieces when cold.
