Peanut Patties 02

PEANUT PATTIES
6 cups granulated sugar
1 cup water
1 cup light corn syrup (Karo syrup)
5 cups raw peanuts
8 drops red food coloring
1/2 cup butter
1/8 tsp salt
Generously grease a large pan with sides.
Bring water, sugar and corn syrup to a boil; add peanuts and food
coloring. Cook over medium heat, stirring frequently, until the
candy reaches the Hard-Ball state (256 F degrees) on a candy
thermometer.
Remove from heat and add the butter and salt. Beat until the mixture
becomes thick. Pour into prepared pan.
Break into pieces when cool.
Note: You can also make these into patties by putting the mixture
into greased muffin cups.
