Sour Cream Fudge

2 cup granulated sugar
1/2 tsp salt
1 cup sour cream
2 tsp butter
1/2 cup chopped nuts

Combine sugar, salt, and sour cream and cook to soft ball stage.
Stir occasionally. Add butter and cool to lukewarm, do not stir.
After 15-20 minutes when cooled, beat vigorously until the mixture
loses its gloss. Add nuts, and spread in buttered dish.

Nice soft non-grainy fudge. Only makes a very small quantity. Quicker to make than fudge where you add butter during cooking stage. Has a slight sour aftertaste, could do with a flavour being added before stiring.
