Glass Candy

3 cups granulated sugar
1/3 cup white corn syrup
1/4 cup water
1 teaspoon white vinegar
1/4 teaspoon cream of tartar
1/8 teaspoon lemon oil
1 teaspoon flavoring oil
food coloring

Combine water, sugar, syrup, vinegar, and cream of tartar in a
saucepan. Place on high heat until dissolved, stirring slightly.
When ingredients are dissolved, place lid on saucepan. Boil for a
few minutes before removing lid. Continue boiling, at medium heat
until mixture reaches 295 degrees . Add lemon oil, desired flavoring
and food coloring. Stir, only to mix color and flavoring. Pour
onto buttered cookie sheet and leave to cool. Break into pieces.
