Key Lime Truffles
Yields: 12

1/4 cup butter
3 tablespoons heavy cream
4 ounces white chocolate
2 Tablespoons key lime juice
1 teaspoon grated lemon or lime peel

4 ounces white chocolate
1 Tablespoon oil
powdered sugar
finely chopped nuts

Bring butter and cream to boil over med-hi heat. Remove from heat
and add chocolate, juice, and peel. Stir until melted and smooth.
Pour into shallow bowl. Refrigerate until firm about 2 hours. Line
baking sheets with waxed paper. Shape rounded tsp. of mixture into
small balls. Place on sheets, chill until firm, 30 minutes. Melt
chocolate for coating and oil, stirring until smooth. Cool slightly.
Dip truffles using fork method, then roll in nuts, powdered sugar
or sprinkles. Return all to refrigerator until set, 30 minutes.
