3 Tbsps. unflavored gelatin
1/2 cup cold water
2 cups white sugar
1/2 cup hot water
2 Tbsps. lemon juice
5/8 cup cold water
1/8 tsp salt
1/2 tsp peppermint extract (or flavour of choice)
1/2 tsp red food coloring (or color of choice)
Soak gelatin in 1/2 cup cold water for 15 min. Combine the sugar
and hot water together in a saucepan and bring to a boil. Stir in
gelatin and simmer for 20 min. Remove from heat and add the lemon
juice and 5/8 cup cold water, blend. Stir in the salt. extract and
coloring. Pour into a moistened 8 x 5 pan. Chill until set. Cut
into cubes and roll in icing sugar.
