Turkish Delight

generous 1/2 pint water 3 tablespoons orange juice 3 tablespoons lemon juice 1 1/2 lbs sugar 1 oz gelatine 3 oz cornstarch 2-4 drops food coloring (optional) icing (powdered) sugar
Combine the water, the orange and lemon juice and the sugar in a heavy saucepan. Bring to a boil over low heat, taking care that the sugar has dissoved before the boiling point is reached. Lower the heat and boil the liquid very gently until it reaches 230 F. Meanwhile, dissolve gelatine in a little hot water. Blend the cornstarch with enough cold water to make a thin paste and add the paste to the hot syrup, stirring constantly. Stir in the gelatine and boil the mixture until clear, stirring occassionally. Add the coloring, if used, and pour into an 8" cake tin. Set aside for at least 24 hours.
Loosen the Turkish Delight in the tin and turn out on to a thick layer of icing sugar. Sprinkle the top with icing sugar and cut into 1 inch squares with a sharp knife. Coat each square with icing sugar immediately.
Note: Rose water may be substituted for the orange and lemon juice.
