Ackee and Saltfish
Jamaica

Clean 2 dozen ackees by removing seeds and all of the pink membranes
in the cleft of ackees, wash in cold water. Put to boil in lots
of water with 1/2 lb salted codfish until ackees are tender.

Heat frying pan with 2 fluid oz oil. Add 2 onions, 1 large tomato,
chopped, then add a slice or two of hot pepper, sprig of thyme and
fry for a few minutes. Meanwhile drain ackees. Flake the salted
codfish. Add both to seasoning, simmer for 5 minutes, serve
garnished with hard boiled eggs.


NOTE: Traditionally a breakfast meal, and saltfish can be prepared
withought the ackee as a meal in itself.
