Baked Papaya
1 medium unripe papaya butter 1 large onion, finely chopped 2 tomatoes, peeled and chopped Salt, freshly ground pepper to taste Bread crumbs grated cheese
Cut the papava in half lengthwise and scoop out the seeds. Drop into boiling water and cook until tender, about 15 minutes. Drain. Carefully scoop out flesh and mash. Reserve shells. Heat 2 tablespoons butter in a skillet and saute the onion until transparent. Add the tomatoes, salt, pepper, and the mashed papaya. Mix well. Stuff the shells with the mixture, sprinkle with bread crumbs and cheese, and dot with butter. Bake in a 400 oven until top is browned. Serves 4-6.
